As you may or may not know, it's Cupcake Week on Martha Stewart. I was very excited about this until I saw yesterday's show and realized she is just doing one segment and that's about it. I expected a full hour of luscious cupcakes, miles of frosting and sweet goodies. Nah. It was just her force feeding some audience members her coconut cupcake and then repeatedly saying, "Was it good? It's good right? ISN'T IT GOOD?" Damn woman, I know you've been in prison so I'm not going to disagree with you.
To also celebrate the week and in an effort to clean out my pantry, I also made cupcakes. I have a well stocked pantry. Like on Top Chef last week if someone came over to raid it, they could probably get a ten course meal out of my pantry alone.
One thing I always have in there is a bottle or two of molasses. You never know when a gustapo is going to show up and demand gingerbread tout de suite. I also found half a bag of marshmallows. I didn't want them to go to waste and I certainly wasn't going to feed them to my children. The obvious choice would be rice krispy treats but I had no cereal. So with these two things in hand I decided to go for a molasses spice cupcake with marshmallow frosting.
I am not a fan of marshmallow frosting - sticky, sweet - but the kids ADORE it, of course. The cupcakes came out great and the kids were happy. I just ate the cake.
